CONSORTIUM FOR THE PROTECTION OF MURAZZANO PDO

Established in 1996, the Consorzio Di Tutela Murazzano PDO cheese was responsible for codifying the production specifications of the famous Tuma di Langa. The Consortium is based in Bossolasco and promotes and enhances this historic Piedmontese cheese, which is becoming more and more unique due to the rarity of the Langa sheep, of which there were more than forty thousand in the 1960s, that number now having dropped to just two thousand.

CONSORTIUM FOR THE PROTECTION OF OSSOLANO PDO

Following the long journey to obtain Protected Designation of Origin status, which ended with the official registration in the European Register of Protected Designations of Origin and Protected Geographical Indications, the constitution and recognition of Consorzio per la Tutela, la promozione e la valorizzazione del formaggio Ossolano PDO, which is the main interlocutor for its future protection and safeguard, has begun. The Protected Designation of Origin represents a ‘collective asset’ which has a positive effect directly on agricultural enterprises and indirectly on other local businesses linked to the product by strengthening the social and identifying bonds between the local population, helping to keep the mountain economy associated with quality cheese alive.

CONSORTIUM FOR THE PROTECTION OF ROCCAVERANO PDO

The Consorzio Di Tutela Roccaverano PDO Cheese was founded in 1988 and currently has 17 members. The monitoring plan implemented for Roccaverano PDO envisages the inspection, during every stage of the production process and for all operators involved in the supply chain, of the following: location, suitability of facilities and/or plants, identification and traceability. The finished product undergoes checks on the conformity of its chemical, physical and sensory characteristics. When the cheese is released for consumption, the Consorzio di Tutela stamp must be applied to the underside of the packaging, underneath which the identification code of the producer and the progressive branding number are indicated. Only after this marking will the product be released onto the market with the Roccaverano Protected Designation of Origin.

The Consorzio Di Tutela Strachítunt Valtaleggio was established in the early 2000s with two main aims: to protect such a prized product, which had already been the subject of numerous imitations and mispronunciations, and to obtain Protected Designation of Origin (PDO) status. In order to preserve the identity and the uniqueness of Strachítunt, the specifications are very strict. The production territory includes four municipalities: Taleggio, Vedeseta, Gerosa (a hamlet of Valbrembilla) and Blello. The milk must come from cattle reared on farms in the production zone, with 90% of the total coming from Bruna Alpina breed cows. These cows must be 65% grass and hay-fed and 90% must come from the Val Taleggio area. The Consortium currently has eleven cheese makers-ripeners working across the whole chain, all of whom are based within the territory envisaged by the specifications.

It embraces 13 municipalities in the Province of Naples. It develops, promotes and protects the product and its designation.

There are 21 members of the voluntary Consorzio Di Tutela Pecorino Siciliano PDO. Thanks to their commitment, the Consortium can safeguard a cheese that represents the historical and cultural heritage of Sicily and the whole of Italy. It is made exclusively from fresh, whole sheep’s milk, coagulated with lamb rennet. The sheep that supply the milk to the cheese makers are reared on wild pastures. Salting is carried out manually on each wheel of cheese while maturing lasts never less than four months and takes place in naturally ventilated rooms. Only in this way does Pecorino Siciliano PDO acquire its own personality, retaining all the flavours of Sicily.

The Consorzio Di Tutela Vastedda Della Valle Del Belice PDO was promoted by the Regional Association of Livestock Breeders of Sicily, the Zootechnical Institute of the Faculty of Agriculture in Palermo, the Regional Province of Agrigento, the Regional Province of Trapani, the Professional Agricultural Organisations and the municipalities of Santa Margherita Belice, Sambuca di Sicilia, Menfi, Sciacca, Partanna and Castelvetrano, in which this exquisite sheep’s milk cheese is made. The Consortium assumes responsibility for protecting and promoting the prized stretched-curd sheep’s cheese and safeguarding the entire historical, cultural and production heritage of the Valle del Belice. The Consortium for the Protection of Vastedda della valle del Belice PDO is flanked constantly by the IZS, the Experimental Zooprophylactic Institute of Sicily, and the ONAF.
