Sustainability

In the second year will also be presented the two studies on sustainability being carried out by the University of Turin Di.Sa.Fa and the University of Palermo Uni.Pa. The two ongoing works relate to the definition of “Guidelines on the sustainability of LOST products” and the “Study on sustainable packaging on the pilot product Vastedda PDO”.

Sustainability guidelines

The first of the two studies already underway is carried out by the University of Turin Di.Sa.Fa. and concerns the guidelines that identify the best sustainability practices in dairy production with designation of origin, analyzing the supply chains of the 8 PDO cheeses of the project in order to identify the main critical elements that influence, directly or indirectly, the sustainability of the supply chains themselves, considering the environmental, economic and social aspects.

The study is being carried out through field analyses, which include direct interviews with supply chain operators and the administration of questionnaires, as well as through the examination of scientific and technical literature to identify the most studied aspects regarding the sustainability of dairy production. The study will see the production of a first report by September 2024 and its completion by the first months of the new year 2025.

The goal of this activity is to identify possible actions aimed at increasing the sustainability of production processes in individual dairy supply chains.

Sustainable packaging study

The study dedicated to the aspect of sustainable packaging was assigned to the University of Palermo Uni.Pa. In line with the general objective of the project, it was requested to draw up a study on sustainable packaging, also portioned, in particular on the PDO Vastedda del Belice (as a pilot product), but adaptable to the 8 PDOs of the LOST program.

The study carried out through the examination of scientific and technical literature to identify the most studied aspects regarding the sustainability of dairy production and through experiments is currently being developed and provides for a first evaluation report of the work carried out by September 2024, while its complete implementation by the first months of 2025. 

The aim of this activity is to identify sustainable packaging also in portions on the Vastedda del Belice PDO the pilot product, providing indications of adaptability to the other LOST PDOs.
